How to Use Them
Lay the mat directly on the grates. Preheat the grill with the mat on it. The mat heats up with the grates — by the time the grill is at temp, the mat is ready to cook on. Cook as you would on any flat surface. Use a spatula, not tongs — the non-stick surface works best with a flat tool.
Keep the temperature under 500 degrees. Above that, the non-stick coating starts to break down. For searing steaks, do it on the grates. For everything else, the mats handle the heat.
Clean with warm water and a soft sponge. Do not use a wire brush — the wire scrapes the non-stick coating off. Do not put them in the dishwasher. A quick wash and they are ready for the next cook. Roll them for storage. They take up less space than a single skillet.
