Smoked Queso Dip is a Win for Any Party

Here is a great and easy way to spice up your party dip. Queso is a Mexican-inspired appetizer or side dish of thick, creamy and smooth melted cheese. If any leftovers remain (HAHA isn't that funny), our queso dip works great to make pulled pork enchiladas.

  • 1 lb breakfast sausage or ground beef
  • 1 lb Velveeta cheese (a favorite restaurant-style block of Velveeta helps this easy queso dip recipe really shine)
     
  • 1 lb of Queso Fresco cheese
  • 1 vine ripe tomato
  • 1 can of Rotel
  • 1 poblano pepper, diced
     
  • 1/4 cup chopped leeks

  1. Brown the meat in a deep cast iron pot along with the leeks, the poblano pepper, and the Sweet Chipotle Rub.
     
  2. During this time, it is a great time to dice up the Queso Fresco, the tomato, and Velveeta.
     
  3. When the meat is done, drain the extra grease.
     
  4. Think of a pizza and place all the ingredients in the same deep pot arranged so the cheeses are not beside each other.
     
  5. I drained the Rotel and placed the fresh diced tomato with it.
     
  6. Cook this indirectly with lump charcoal and a single 4x4 chunk of apple wood for added smoky flavor.
     
  7. 30 minutes after placing the pot in the smoker, stir the meat and tomatoes gently but avoid mixing everything thoroughly yet.
     
  8. Just as the Queso starts to brown on the edges and the outer part begins to sizzle in the cast iron, it's time to remove from the smoker.
    Total cooking time was about 1 hour.
  9. My cast iron pot has a lid, so I replaced it to hold residual heat and keep the queso dip warm and creamy.
     
  10. Give the mix a good stir and enjoy the smoky, cheesy goodness you created—a perfect party dip served with tortilla chips.
