How much injection does a whole packer brisket need?
A standard 12-to-16-pound packer brisket takes roughly 12 to 16 ounces of mixed injection solution. Mix Butcher BBQ Original Brisket Injection according to the label — one ounce of powder to two cups of water is the standard ratio, which yields about 16 ounces of solution. Load the injector and work in a one-inch grid pattern across the entire brisket, flat and point, top and bottom. Depress the plunger slowly as you pull the needle out so the injection distributes along the needle track instead of pooling.
