Injections and Brines
If your cooking a brisket, pork butt, turkey, ribs, or chicken. Put flavor deep inside the meat. While our rubs covers the outside flavors.
The Butcher BBQ Cordless Electric Knife is the electric cordless knife built for the pit. Two blades. One battery. No cord. No outlet. No waiting for an extension cord while the brisket rests on the board. You just spent 12 hours smoking the perfect brisket. The bark is set, the meat is tender, and the last thing you want is a carving knife that fights you — or a cord dragging through your cutting board. That's why we built the Butcher BBQ Cordless Electric Knife.
This cordless electric knife glides through brisket, turkey, prime rib, and pork shoulder without you having to saw back and forth. The blades do the work. You guide. That means cleaner cuts, less shredding, and slices that hold together on the plate — exactly what judges are looking for, and exactly what your guests will notice.
Why not just use a regular knife?
Because a manual knife goes dull in the middle of a big carve. You start with clean slices, and by the time you hit the point end of a full packer, the blade is tearing through the bark instead of cutting it. A corded electric knife fights you too — the cord snags the board, pulls the knife off-line, and has you hunting for an outlet beside the tent. The Butcher BBQ Cordless Electric Knife holds its edge through an entire brisket. The Titanium Nitride coating keeps the blade sharp slice after slice, so the last cut looks as clean as the first.
Lead with the proteins that matter on a pit.
Two stainless steel blades come with it, so you've got the right edge whether you're carving brisket, trimming a turkey, or slicing prime rib. Swapping blades takes four quick steps — no tools, no fuss. And because it's cordless, you can carve at the prep table, on the patio, or right at the judging tent without hunting for an outlet or untangling a cord.
Competition cooks report carving a full packer brisket on a single charge. The rechargeable battery means no scrambling for fresh AAs mid-carve, and the hard washable case keeps everything organized and ready to toss in the truck for the next competition.
Five pieces total. One knife. Two blades. Built-in battery. Carrying case. USB charging cord. Full instruction manual. Everything you need to carve clean, serve fast, and make the meat look as good as it tastes.
Trust Your Butcher. This is a championship-built tool backed by the same people behind those two World BBQ Championships — and if it doesn't carve the cleanest brisket you've ever sliced, we'll make it right.
WARNING: California's Proposition 65
The Butcher BBQ Cordless Electric Knife comes with two blades built for two different cutting jobs. The 10-inch stiff blade is the brisket blade — long enough to pull through the full width of a packer flat in a single pass, rigid enough to hold a straight line through dense, rested beef without deflecting. Use it for brisket, prime rib, pork shoulder, and whole smoked turkey where a long, straight cut is the goal. The 7-inch flex blade is the detail blade — shorter and slightly flexible, designed for filleting fish, trimming around bones, and carving chicken where the blade needs to follow a curved surface rather than cut in a straight line. One knife, two jobs. Swap blades in four steps with no tools required.
Titanium Nitride is a ceramic coating applied to the blade surface of Butcher BBQ Cordless Electric Knife that reduces friction between the two reciprocating blade halves as they move against each other during cutting. Lower friction between the blades means less heat buildup during extended carving sessions, less drag as the blades pass through meat, and longer blade life before the cutting edge degrades. The coating also creates a harder surface than bare stainless steel, which resists micro-abrasion from repeated blade-on-blade contact. The practical result is a knife that cuts more smoothly through a full brisket flat than an uncoated electric knife and maintains that cutting performance over more uses before the blades need replacement.
Rest the brisket fully before cutting — a minimum of 30 minutes unwrapped, or 1 to 2 hours in a dry cooler. A brisket that has not rested will shred under any blade, electric or manual. Install the 10-inch stiff blade in the Butcher BBQ Cordless Electric Knife. Position the knife at the point end of the flat, perpendicular to the grain. Engage the trigger and let the blade do the work — apply light forward pressure only, no downward force. The blade oscillates fast enough that pressing down compresses the meat and produces ragged slices rather than clean ones. Cut slices at pencil thickness — approximately one-quarter inch — for competition turn-in. The LED light on the Butcher BBQ Cordless Electric Knife illuminates the cut line, which matters when you are working under a tent canopy or in low light at an early morning turn-in.
Butcher BBQ Cordless Electric Knife is hand wash only — do not submerge the handle or put any part of the knife in the dishwasher. The motor and battery are sealed inside the handle, and water intrusion through the blade attachment point or the USB charging port will damage the motor. After each use, remove the blade from the handle by following the four-step blade release process in the instruction manual. Wash the blade under warm running water with dish soap, working a soft brush or cloth between the two blade halves to remove fat and meat residue from the gap. Rinse thoroughly and dry completely before reattaching or storing. Wipe the handle with a damp cloth — do not run water over it. Store the knife in the hard carrying case with the blade removed and the safety lock engaged.
The short answer: yes, for some fish. The long answer matters more.
The 7-inch flex blade on the Butcher BBQ Cordless Electric Knife handles light filleting tasks — panfish, crappie, smaller trout, and cleaning freshwater catches at the dock. The Titanium Nitride coating glides through skin without tearing, and the cordless design means you are not running an extension cord to the cleaning station or balancing a battery pack on the side of the boat.
But this is a carving knife first. It is built to slice a whole packer brisket clean across the flat, not to follow the rib cage of a 20-pound salmon. If you process large saltwater fish or need a dedicated cordless electric fillet knife for tournament days, this is the wrong tool for that job. The flex blade has give, but it does not have the whippy tip or the narrow profile of a purpose-built fillet knife.
Here is where the Butcher BBQ Cordless Electric Knife beats any fillet knife on the market: the carving. Take it from the dock to the smoker. Clean your catch with the flex blade. Swap to the 10-inch stiff blade. Carve the brisket, slice the pork shoulder, and portion the turkey breast into clean, even cuts that hold their shape on the plate. No fillet knife can do that.
A dedicated cordless electric fillet knife is a single-task tool. This one opens up the second you step off the boat.
This electric carving knife cordless setup was built for the big cuts — the ones where a dull blade turns a clean slice into shredded meat.
Whole packer brisket. The 10-inch stiff blade cuts across the flat in one pass. No sawing. No tearing the bark. Clean slices that hold together from edge to center.
Pork shoulder. The same stiff blade handles the money muscle and the pulled sections without clogging or binding.
Turkey breast. The 7-inch flex blade follows the natural grain at the bone. You get even slices for the holiday platter instead of a pile of torn white meat.
Prime rib, ham, whole chickens, tri-tip, smoked chuck roast — the two-blade system covers the whole pit. If the cut weighs more than five pounds and you want it sliced clean, this knife handles it.
Two to three hours of continuous run time on a full charge. Continuous means the blades are spinning and cutting. Most backyard cooks carve for maybe ten minutes total. Competition cooks run longer during turn-in prep, but the battery still outlasts the work.
The real advantage is that two to three hours covers a whole cook without stopping. Slice the brisket. Slice the pork. Slice the turkey breast. Portion the chicken. The battery does not die between courses.
Charging is USB-C. Plug it into the same cable you charge your phone with. Full charge takes about two hours. If you forgot to charge it overnight, plug it in while the meat rests and it will have enough juice by the time the cooler opens.
Three things.
The blades. Both the 10-inch stiff blade and the 7-inch flex blade are coated in Titanium Nitride. That is the same coating on high-end drill bits and industrial cutting tools. It stays sharp longer than stainless, it glides through bark without grabbing, and it does not corrode in a damp competition trailer. Standard electric knife blades are stamped stainless steel with no coating.
The battery. Most cordless electric knives run on AA batteries and die halfway through a brisket. This one runs on a rechargeable lithium-ion pack with two to three hours of runtime. USB-C charging. No battery drawer. No scrambling for spares.
The two-blade system. A stiff blade for big muscle cuts. A flex blade for working around bone. One knife. Two jobs. Standard electric knives give you one blade that does neither job well.
